A Day at the Farm

Ultan and Lucy welcomed us with a big smile and a lot of food. Read all about the event on our blog http://corkcityslowfood.blogspot.com/ where you can see also some lovely pictures.

This event was also a charity event for KOST - 50% of the proceedings will go towards KOST. This charity is supported by Gort Na Nain and we were happy to join Ultan and Lucy in the support.

Grandmother's day at Hosford

What a great event. Dianne Curtin and Ruth Healy from Slow Food West Cork and myself had so much fun talking to all people - big, tall, small, young, oldish - everyone enjoyed themselves.

Denise from Bushbys Rosscarbery Strawberries showed us how to make the perfect strawberry jam - and although not a jam fan myself.....I had to admit that it was the most delicious jam I have ever tasted - and talked about her granddaughter and how she helps to make the jam at home. Mary from the Ballinascarthy Bakers was the delight of all children as she made scones with them. Everyone was able to stir, add, knead and form scones. A big tray was carried carefully to the kitchen of The Blue Geranium Cafe where they were baked until golden brown. Let me ensure you, they tasted as yummy as they looked and Denise's jam was a perfect match. You can meet the Ballinascarthy Bakers Saturdays at the Bandon Farmer's Market.

Bob McCutcheon from the Irish Beekeeper Association brought honey I was willing to kill for. He gave us different types of flavours - whitethorn being my personal favourite. You can buy the honey in the shop of Hosford's garden centre.

Music was delivered by the Commodore Male Voice Choir from Cobh and the 3G's.

The Children's Art Competition was won by Grace Kearney, aged 8 with Ava Punch, aged 5 being runner up. We saw amazing talent within the children and can only hope that they keep at it - who knows, we might had the next Picasso amongst us yesterday.

Thank you to all involved incl. Hosford for their hospitality, the Commodore Mail Voice choir, The 3 G's and last but not least to Nick, our camera man who volunteered his Sunday afternoon to catch the moments of our Grandmother's Day. He is now busy to edit the lot and we will burn a DVD of the event. Please let us know if you would like to obtain a copy.


Beekeeping in Cork
Last night's event was a great success and Eddie O'Sullivan from Cork gave a lovely presentation about bees and the keeping of them. I believe there is nothing Eddie doesn't know about bees and he took the time to answer all questions from the audience. We also had a 'junior' beekeeper amongst us and Eddie was delighted with the fact that new people are getting into the old art of beekeeping again. Below are some photos from the event.

Eddie also offered a beekeeping class to people who are interested. Please leave a comment on this blog if you are interested in a beekeeping class and we will organise a class with Eddie when we have enough people interested in it.

Pig Extravaganza Sunday Jan 18th - Heron's Court, Bandon

To celebrate National Pork Weekend, our first event of 2009 centred around one of the longest traditions in Cork.

Slow Food West Cork and Cork City hosted a talk and lunch to support local pig farmers.

Avril from Cahersberg, Frank from West Cork Salamis, Fingal from Gubbeen Smoke House, Anthony from Ummera and Martin from Carey's Butchers all shared their knowledge with members and guests, while chowing down to Frank Krawcykz's '3 course All Pork' menu in Heron Court Cafe, taken over for the day by chefs Robbie Krawcykz and Beth-Ann Smith (For Catering Email Beth-Ann).

2008 Events

On Sunday September 28th we were invited to West Cork to visit Paul and Yvonne Johnson's Dexter girls. These horned cattle are the first herd of pedigrees to be to be reared in their native West Cork for generations.

Just 42 inches in height they are one of the smallest breeds in the world.Paul farms with his eyes and ears.No additives or feeds are used.They grow the natural way,hence the better quality tender meat.

This Slow Food event is in aid of Terre Madre Ireland. Terre Madre is a network of food communities, each committed to producing quality food in a responsible, sustainable way and is coordinated by Slow Food. Money raised from this event will go towards the first ever Slow Food Terre Madre event in Ireland, which will be held in Waterford from 4th to 7th September 2008.

Guests will receive a glass of wine compliments of Febvre , printed recipe cards and contact details of the producers, whilst munching on the delicious food on offer.

Saturday Afternoon - Slow Food Workshops
Workshops will be held at The Imperial Hotel on The South Mall. Workshops are priced at 8euros for members and 10euros for non-members. You can book for the workshops by calling 021 4505819

11am to 12.30pm - Regina Sexton will present a workshop of the work of Ireland's Slow Food Ark of Taste. The Ark aims to identify, describe and catalogue ingredients, dishes, food production techniques, animals and cultivars that have a traditional and cultural link with the island and that are endangered of disappearing. To date the Ark has sought to project drisheen, boxty (a type of potato cake), fresh blood puddings, Macroom oatmeal and a number of seaweeds.

1.30 pm to 3pm - The Spice Trail with Aran Kapil and Ivan Whelan of Green Saffron, an East Cork spice company they are purveyors of fine spices and superior spice blends. They will give a guide of the Indian Spice trail and will give an exciting demonstration on one of their favourite dishes. Spice Blends will be on sale after the workshop.

3.30pm to 5pm - School Lunchboxes with Clodagh McKenna (Food Writer) and Jacque Barry (Chef and Mother!). We will be looking at what is available in the shops to buy and how to read the labels properly. We will also be demonstrating simple recipes for your kids lunchboxes.

Saturday Evening - Slow Food Cork Festival Dinners
You can choose from 3 different restaurants to eat in - Jacques, Café Paradiso, and The Ivory Tower. The restaurants will be putting on a special menu using local and seasonal foods. Everyone is to meet in The High-B bar on Oliver Plunkett Street at 5pm for an aperitivo! And then on to the restaurants, dinner will be followed by a drink in Callahans Bar.

The Annual Slow Food Cork Lough Hyne Picnic!
At the end of the nineteenth century two famous West Cork authors – Sommerville and Ross – staged an annual picnic at the top of Lough Hyne. Every year we revive the tradition with a fabulous Slow Food picnic.
This year Stephen Canty will be preparing the picnics. Stephen owns 'Food For Thought' in Ballydehob - a hip new catering company.

Important Notes:

Members and their guests will assemble at the bottom of Lough Hyne at 1pm and together we will make the climb! For those who haven’t enjoyed this fabulous walk it normally takes between half an hour and an hour (depending on how fit you are) and the view from the top is absolutely spectacular. We aim to sit down for our picnic between 2pm and 2.30pm.

Naturally, children are welcome – but because the path is steep getting a pushchair up would be impossible.

Please bring your own rugs, cushions, glasses and mineral water. Everything else will be provided.

As all the picnics will be made up in advance YOU MUST BOOK FOR THIS EVENT.

Lough Hyne is situated about 4 miles outside Skibbereen, follow the road to Baltimore and then there will be a signpost situated on your left for Lough Hyne.

Slow Food Cork City Spring Supper and Slow Film...A date for your Diary - Tuesday 28th March
A showing of the new Irish film 'short order' in the kino cinema, cork at 7pm and following the film a spring supper at cafe paradiso at 9.30pm (there will be a half an hour gap so you can have a drink at Reidy's bar)

Short Order is a new film from Irish director Anthony Byrne. A colourful, tongue-in-cheek surreal musical-comedy, starring Emma de Caunes, Jack Dee, Paul Kaye, John Hurt and Vanessa Redgrave. It’s a magical night in the lives of our protagonists: Short Order Chefs, Masterchefs, Delivery People, working out their philosophies between bites of honest to goodness, onions, garlic, lemon and rum drenched prawns, house special Osso Bucco (featuring the freshly chopped fingers of Bill Dodging Customers). A little bit of life, love and wisdom come together over one night in the culinary underbelly where life is a buffet and everything is short order.

Slow Food Cork Festival Awards: Recognising Excellence

Patrick and Simon O’Flynn of O’Flynn and Sons Butchers’ shop in Marlboro Street took the prize for the best food retail outlet in last weekend’s Slow Food Cork Festival awards, which were held in the Glucksman Gallery in UCC. I interviewed all those nominated in six different categories and I asked Simon why he thought their shop was so different? With a less humble interviewee such a question might prompt attempts at self-aggrandisement but Simon was retiring. ‘I don’t know why we’re different, I can’t answer that question’ he replied, ‘I just put out the meat, people come in, they give me money, I go home, fly a plane and listen to music, I come in the next day and do it all again.’ I should explain the last two references; in his spare time Simon flies and sometimes if you’re in the Opera House and look in the pit you get a fright because there before you is your butcher playing the viola- Simon is a member of the Cork Symphony Orchestra. On a more serious note, however, we do know why the shop is so different. To begin with Simon and Patrick are real butchers in a time when the craft of the butcher is under serious threat. They also stock a variety of game in season, offering venison, mallard, snipe, grouse and pheasant for sale and of course they are also famous for their 26 different varieties of sausages. And more importantly perhaps the O’ Flynns have the foresight to hang their beef for a least three weeks making theirs some of the most flavoursome meat in the city.
The O’Flynns were amongst five other categories and winners. Denis Cotter of Cafe Paradiso won in the category of best chef. Denis was born in Macroom and after a career in the bank he left Ireland to learn how to cook. He spent some time in Cranks in the mid-1980s where he met Bridget and then left to spend some time in New Zealand. In 1993 they both began the restaurant and it has maintained a reputation for excellence ever since offering seasonal menus of imaginative and exciting dishes, based on the best local and organic vegetables. Denis has also published two cookbooks, the Cafe Paradiso Cookbook (1999) and Café Paradiso Seasons (2003). He acknowledges the work of the producers and growers and remains indebted to them for the food that he cooks in the kitchen.
The best producer award went to Bill Hogan and Seán Ferry of West Cork Natural Cheese. Sean Ferry and Bill Hogan were trained in the art of thermophilic cheesemaking first by Josef Dubach of the Swiss Centre for Appropriate Technology and then by Josef Enz of Giswil, Canton Obwalden. From both teachers they learned that respect for the consumer, the land and the raw material is intrinsic to the Swiss system of thermophilic cheesemaking. In the summer of 1987, they were retrained on the high alp above Giswil, Obwalden, central Switzerland by Josef Enz, Cheesemaster. They learned that thermophilic cheesemaking is an old and engrained technique in the area. Indeed, in classical times, the Romans prized these giant hard cheeses from the Alps. The education on sustainable production and quality cheesemaking they received from Josef Dubach, their first teacher, and from Josef Enz in Giswil, has enabled them to help restore thermophilic cheesemaking to Ireland. In 1987 when the were retraining one comment made by several cheesemakers in various parts of Switzerland which Bill remembers was that when the Swiss cheesemakers learned that they were from Ireland they replied: "Ireland, country that once had thermophilic cheese but lost it." Since the mid-1980s Bill and Seán have been making Gabriel & Desmond in Schull. This year they have broken the mould and are now making cheeses in collaboration with Newmarket Co-Op, northwest County Cork.

Another cheesemaker, Silke Cropp of Corleggy farmhouse cheese took the award for best stallholder at market. Born and reared in Osnabrueck in Germany her first career was teaching German and Art. She emigrated to Belturbet in Co.Cavan in 1982 and continued to teach part time at secondary level until 2000.Having acquired a goat in her first year living in the country, she (the goat) soon gave too much milk to consume...and it all started from there. In 1985 she was milking 25 goats, later 120 and made Corleggy Goats’ Cheese on a daily basis. In the late 80s the Dublin Food Coop was founded and at that time operated fortnightly-it was her first regular marketing experience selling cheese directly to the consumer. It worked very well so the next step was to found a more public market. In May 1997 she was one of four food producers to start the Temple Bar Market in Meeting House Square in Dublin. After a slow start they are now a very established Saturday event in the city where she very much enjoys meeting and talking to customers.
She no longer milks the goats herself, which gives her more time to make different cheeses. She now makes a range of hard cows milk cheeses called Drumlin, a sheeps’ milk cheese called Crenny and of course she continues to make Corleggy.
In 2003, she received the Ballygowan Irish Food Writers Supreme Award.
The award for best volunteer who is active in the promotion of quality Irish produce went to Claire Osborne and Elinor Rovers of the Cork Mandala of Community Gardens. Since 2003 they have been working with eight communities in Cork city to help them to design, create and maintain gardens specific to their needs, as well as to create art works for the gardens and host community celebrations in 2005 (more of their work at a later date). And finally, the award for best media went to Sally and John McKenna, The Bridgestone Guides. Their publications are indispensable companions to discovering the best of Irish restaurants, producers and farmers’ and country markets. They have worked tirelessly, unpretentiously and sincerely in extending information and their reflections on the best the island has to offer. Congratulations to all the winners and long may their work continue.

An exciting programme
The weekend starts on Friday night 23rd of September with a ‘Cork Schools Dinner’ at the Millennium Hall. The aim of the dinner is to raise awareness and funding for the ‘Cork Edible School Gardens Project’. Saturday morning will be dedicated to workshops, then in the afternoon there will be a huge farmers market on Patrick Street and a Cork City food tour. The ‘Slow Pub Trail’ starts at 7pm in Tom Barry’s Pub and ends at the Franciscan Well. Three of the five pubs will host fantastic Cork Artisan Producers selling plates of their food for €5. There will also be a quiz with a fabulous ‘food’ prize, please ask for further details in the pubs listed.
Excursions will take place on Sunday to visit producers and to go foraging in Cork County. If you prefer to stay city centered Kino Art House Cinema will be showcasing ‘foodie movies’ all afternoon and further workshops will take place in UCC. The last event will be the ‘Slow Food Cork Awards’ recognising the sterling work and innovative enterprise of Ireland’s leading artisan food producers, chefs and quality food retailers. Additional categories will also acknowledge the work of food journalists and volunteers who work promoting the merits of quality Irish produce. Slow Food Cork will host a gala dinner for 300 guests in City Halls Millennuim Hall to raise funding for the ‘Cork Edible School Gardens Project’. The menu cards and centre pieces will all be designed by childrens’ schools in Cork. Cooking the dinner will be some of Corks great Chefs: Darina Allen,
Seamus O’Connaill, Denis Cotter, Clodagh McKenna and Simone Kelly. Welcome Address: John Bowman.
