FARMHOUSE CHEESE

Magpie Cottage Goat Cheese

Phil and Christine Rhodes make a soft goat cheese from the milk of their eighteen Anglo Nubian goats.

Soft goat cheese preserved in sunflower oil and flavoured with garlic and thyme or basil and sun dried tomatoes.

Winner of Silver Medal in the world cheese awards 2008.

Award-winning farmhouse cheese maker Jane Murphy and her family make a variety of cheeses from the milk of their herd of Nubian goats. Cnoc Bán a soft goats cheese.

Fermoy Cheese, Strawhall, Fermoy, Co. Cork

Frank and Gudrun Shinnick’s award winning cheese made from the milk of their own herd of pedigree Friesian cows The long grazing season on the fertile pastures of the Blackwater River valley produces superb quality raw milk. Fermoy cheese is a member of the Slow Food Raw Milk Cheese Presidia.

At present they produce five different cheeses.

St. Gall: a thermophilic hard cheese, matured for 5 to 6 months.

Cáis Dubh: matured for 4 months.

St. Brigid: a semi soft, loaf shaped cheese, matured for 2 months.

Emerald: matured for 2 months.

Cáis Rua: is a soft cheese similar to Vacherin Mont d’or or Reblochon.

Hibernia: matured for 12 months or more.

Gubbeen Cheese

Gubben Farm, Schull, Skibbereen, West Cork.

Award-winning farmhouse cheese makers Giana and Tom Ferguson make a washed rind cheese called Gubbeen from the milk of the Friesian and Kerry cows on their farm outside Schull.

A Smoked Gubbeen is also produced.

Durrus Cheese

Coomkeen, Durrus, West Cork.

Jeffa Gill another star in the farmhouse cheese firnament. She makes her washed rind cheese from the raw milk of her neighbour’s Friesian herd.

Baylough Cheese

Mount Anglesby, Clogheen, Co. Tipperary.

Dick and Ann Keating’s Baylough Cheese is made from the milk of a herd of Friesian cows in the foothills of the Knockmealdown mountains.

MEAT - LAMB

Comeragh Mountain Lamb

Comeragh, Co.Waterford.

William Drohan’s lambs roam free range over extensive areas of mountains. They graze over a much broader and more varied landscape than the lowland varieties. On the mountains, they eat grasses, herbs, wild flowers, heathers and drink natural spring water, all free from chemicals and pesticides. Due to this fact they have significantly more omega 3 fatty acids in their tissues than average lamb. His lamb is prepared locally by an artisan butcher and is dry aged for ten days. These combined give Comeragh Mountain Lamb it’s unique and delicate flavour.

Rigney’s Farm

Caroline & Joe Rigney’s award winning pork products come from free range rare breed pigs such as Tamworth and Saddlebacks.
